Introduction
Fruit powders are made by Spray drying and vacuum processing method. Fruit powders are available at organic markets and health food stores. Fruits contain more water; hence it is concentrated to remove excess water, demineralized which is then spray-dried to get free flowing powder. Fruit powders can be used as an ingredient for cooking or as flavouring agent. Fruit powders have long shelf life at ambient temperature due to low water activity along with low logistic expenditure due to low weight and volume.

Objective
The primary objective of the model report is to facilitate the entrepreneurs in understanding the importance of setting up unit of Fruit & Vegetable Powder. This model report will serve as guidance to the entrepreneurs on starting up such a new project and basic technical knowledge for setting up such a facility.
Critical Success Factors
There are many established national as well as regional brands but they have captured mainly the urban and elite markets and for a quality product, there is a vast market which can be penetrated by offering competitive prices. Marketing would play a crucial role and placement, publicity, commission to retailers etc. are important aspects.
Raw Material
Basic Raw material for proposed unit is Fruits and Vegetable like Banana, Mango, Tamarind, Orange Powder, Strawberry, Pineapple, Lemon, Spinach, Carrot, Ginger, Mint, KasooriMethi etc.
Capacity
The capacity of the project is 4 TPD, assuming the working capacity of the machinery is 8 Hrs per day for 300 working days.

It will take Eighteen (18) months to complete all the formalities before starting the commercial production.
