Market and Process of Fruits & Vegetable Powder

Introduction

Fruit powders are made by Spray drying and vacuum processing method. Fruit powders are available at organic markets and health food stores. Fruits contain more water, hence it is concentrated to remove excess water, demineralized which is then spray-dried to get free flowing powder. Fruit powders can be used as an ingredient for cooking or as flavoring agent. Fruit powders have long shelf life at ambient temperature due to low water activity along with low logistic expenditure due to low weight and volume. Fruit powders are made from either spray drying or freeze drying process. Fruit powders comprise sun-dried or freeze-dried that is ground into powder, devoid of supplementary additives that contains around similar calories as raw fruit. Fruit powders contains no artificial colors or preservatives in it coupled with low-fat and low sodium amount present in Fruit powders. Fruit powders are mostly used in supplements, beverages and vitamin enhanced formulas. Fruit powders are convenient to incorporate in pharmaceutical formulations such as tablets, capsules or softgels.

Spray Drying Technology

The spray dryer is a device used to produce dried foods. It takes a liquid stream and separates the solute or suspension as a solid and the solvent into a vapor. The solid is usually collected in a drum or cyclone.

The liquid input stream is sprayed through a nozzle into a hot vapor stream and vaporized. The solid as forms as moisture contents quickly leave the droplets. A nozzle is usually used to make the droplets as small as possible to maximize the heat transfer and rate of water vaporization.

The spray dryers can dry a product very quickly compared to other methods of drying. They also turn a solution or slurry into a dried powder in a single step, which can be the advantage for maximizing the profit and minimize the process.
